1. Easter cake. The traditional recipe.
 
         Each family has its own tradition, but if you do not have a family recipe, we offer you a home-made cake recipe that you can cook for the first time.
 
Ingredients.
For the test:
• 200 ml of warm milk
• 25g. fresh yeast
• 200 g sugar
• 500-550 g flour
• 100 g fat sour cream (25%)
• 4 eggs
• 30 g of vegetable oil
• 0.5 tsp salt
• Raisins at will.
 
For glaze:
• 100g. powdered sugar
• 0.5 teaspoon of gelatin + 1 tbsp. spoon of water
• 1 teaspoon of lemon juice
 
         All ingredients should be at room temperature. First, prepare the dough: pour warm milk into the pan, add yeast, a tablespoon of sugar and 3 tablespoons of flour, the consistency of sour cream should be obtained. The lumps will disperse themselves, they do not need to be broken. Cover and set in a warm place for 20-30 minutes. Opara should increase 2 times.
         In a deep bowl, mix the eggs, the remaining sugar and salt, with a whisk or mixer, beat in a lush foam, add soft butter and sour cream, mix and add the dough. Pour flour into a large bowl, make a depression, pour in the mixture and mix. Then sprinkle flour on the cutting table and here we already knead the dough with our hands. When a uniform lump is already obtained from the dough, add vegetable oil and knead with oil so as not to add excess flour. The dough should be soft, elastic and keep its shape well. Knead for 10-15 minutes. We put the dough in a large bowl, cover with a film, you can cover with a towel, and put in a warm place. It should become fluffy and increase in volume by 2 times. It takes 1.5-2 hours. You can fill out the forms. From this amount of dough you get 3-4 medium-sized Easter cakes. Roll each piece into a ball. Fill out the form by about half or less. Leave in a warm place for 2 hours, the dough should come up and fill the mold, not reaching 2-3 cm to the edge. We bake at a temperature of 160 degrees below average, the tops can be covered with parchment so as not to burn. It takes about 30 minutes, check the readiness with a wooden stick.
 
Cooking the icing.
         Mix half a teaspoon of gelatin and 1 tablespoon of water, leave to swell for 10 minutes. In a saucepan, mix 100 g of powdered sugar, 2 tablespoons of water and a teaspoon of lemon juice, dissolve over low heat. When the syrup boils, remove from heat, add the swollen gelatin and mix until smooth. Beat with a mixer for 4-5 minutes - it turns out the air mass. We decorate Easter cakes with glaze immediately so that the glaze does not harden.
 
2. Butter roll with poppy seeds. The tradition of our grandmothers.
 
         We use yeast dough for Easter cake from the previous recipe. It is convenient that several types of baking can be prepared from one dough. Skillful housewives can make a roll in the shape of a wreath to decorate the festive table. This recipe needs the same amount of dough.
 
Cooking poppy seed filling.
Ingredients:
 
• Dry poppy 500 g.
• 5 tablespoons of sugar
• Butter 100g.
• 1 egg white
 
         Pour poppy seeds into the pan, rinse like cereals. Fill with water and cook over low heat for 1.5-2 hours. Rinse again 2 times with cold water and decant through gauze. Ingredients:
 
• Cottage cheese 400 g
• Oil 250 g
• Flour 400 g
• Sugar 150 g
• Vanilla sugar 1 tsp
• Baking powder 2 tsp
 
         Knead the butter and cottage cheese with a fork, add the sifted flour, baking powder, mix everything and knead the dough with your hands on the table; cover with a film and put in the refrigerator for an hour. We divide the dough into 2 parts. Sprinkle the surface with flour, mix the dough and roll into a circle. Sprinkle with half the sugar mixed with vanilla, and roll the sugar into the dough with a rolling pin. The layer should be thin, 1 mm. Cut like a cake into triangles and twist from thick to thin, squeeze a little so that the dough does not stick. Put the bagels on a baking sheet with parchment paper and sprinkle with sugar again. Bake for 20-25 minutes. With the second part of the test, we do the same. Bagels are soft, sweet and melt in your mouth.
 
5. Rum woman

• 100 g sugar
• 2 tablespoons of rum (liquor)
